With a
jar of organic tahini paste, dairy - free chocolate chips and an organic dark chocolate bar on hand, I was going to find out
if this
recipe was going to produce our new favorite paleo chocolate chip cookie.
This
recipe calls for homemade paleo mayo, so
if you don't have a
jar of it sitting in your fridge already I highly recommend whipping one up!
And every once in a while, when you're using a fresh bean in a
recipe, you can add the empty pod (rinsed off and dried
if it's been steeped in milk or cream) to the
jar (see note).

So for this
recipe I had no choice but to use my own homemade almond butter, which I calculated out to be $ 2.09 for the half cup I used in the
recipe, although you may be able to get a better price than me
if you buy a
jar of prepared almond butter.
What's in it: 1 medium - sized spaghetti squash (about 3 - 4 pounds) 5 tablespoons vegetable oil, I used half peanut half canola Kosher salt and Freshly ground black pepper 2 eggs (optional, I omitted this to keep mine vegan) 1 (15 - ounce) package firm or extra firm tofu, water pressed out and diced * 1 red onion, thinly sliced 6 cloves garlic, finely minced 2 cups carrots, cut into matchsticks 2 cups bean sprouts 6 scallions, sliced Other optional veggies: I added a cup of sliced white mushrooms, but broccoli, peapods, or any others you like would work as well 4 tablespoons Pad Thai sauce, more to taste ** 1/3 cup peanuts, chopped 1/4 cup cilantro, chopped 1 lime, cut into wedges * you could alternatively use chicken or shrimp
if you're not a tofu fan ** I used a
jarred pad thai sauce to save some time but check out the original
recipe link above to see the full sauce

If you aren't interested in canning such a large amount, you could reduce the
recipe down considerably to make enough for about one
jar and keep it in your fridge for up to a week.
You can either use your favorite sauce in a
jar if you're pressed for time or the tomato sauce from our vegan cabbage rolls
recipe.
If you'd like to go the mason
jar route, simply bake the cake part of this
recipe on a parchment lined (or buttered and floured) sheet tray.
If you'd like to process the jam to store for longer, follow the
jar preparation and processing instructions in Molly Wizenberg's Mixed - Berry Jam
recipe.
But,
if you don't have a super sentimental Italian soda container laying around, this
recipe will also fill one half pint
jar.
As a bonus, they tend to hold a lot more filling than a standard tortilla:)-

jarred BBQ sauce, you'll need a scant cup of it for this
recipe.

I roasted my own red bell peppers in this
recipe, but you can use store - bought
jarred ones
if you prefer.
This
recipe is enough to fill 3 small
jars, it's super low in sugar (no added sugar at all, it's all from the fruits) and you don't have to use mango and kiwifruit
if you don't want to.
I love it when «Pumpkin Spice» mix is available at the grocery store, as it makes this
recipe as fast as possible, but
if you can't locate a pre-made
jar, simply make your own by using a heaping 1/4 teaspoon of ground cinnamon, an 1/8 teaspoon of ground ginger, and a pinch of ground nutmeg to replace the 1/2 teaspoon called for in this
recipe.
Also, feel free to use a
jar of prepared enchilada sauce in this
recipe,
if you prefer.
