1 (3 - pound) pie pumpkin, or other orange - fleshed squash such as butternut, Red
Kuri, or Golden Hubbard 8 tablespoons (1/2 cup) unsalted butter 1/2 cup olive oil 1/2 cup finely ground cornmeal 2 medium turnips (about 12 ounces total) 2 medium red bell peppers, chopped 1 large onion, chopped 6 cloves garlic, minced 2 tablespoons tomato paste 4 cups low - sodium vegetable broth 2 (10 - ounce) cans diced tomatoes with green chilies, such as Rotel 2 (16 - ounce) cans chili beans, drained 2 cups frozen corn kernels 1 tablespoon chili powder 1 teaspoon ground cinnamon 1 teaspoon ground cumin Several dashes vegetarian Worcestershire sauce Salt Freshly ground black pepper Balsamic vinegar
For serving: chopped green onions, shredded cheddar cheese, sour cream
I've never had
kuri, but you can bet I'm going to look
for it next time I'm food shopping!
In addition to requiring less sugar, another reason I like using
kuri squash is that the purée does not need to drain the way homemade pumpkin purée does: it doesn't contain much moisture which makes it ideal
for pie making.
The flesh is good in soups or baked goods, and the Red
Kuri's small size makes it perfect
for stuffing and roasting.
Look
for French varieties like Rouge Vif d'Etampes, other pumpkins labeled «Cinderella» pumpkins (like cheese pumpkins, Blue Hokkaido, and Red
Kuri.
For the smoothie depicted above I actually used one cup of red
kuri squash.
Ingredients: Harissa, Squash & Chickpea Stew 2 Tbsp extra-virgin olive oil 3 Tbsp harissa paste 1 (2 — 3 pound) creamy - fleshed pumpkin such as kabocha or red
kuri or buttercup (NOT butternut, which is too stringy
for this recipe), seeded, peeled, and cut into 1⁄2 - inch cubes 1 onion, diced 2 cloves garlic, minced 2 cups cooked chickpeas (from 1 (19 oz.)
If you are inclined, it's super easy to whole roast a pie pumpkin or red
kuri squash by cooking it
for an hour or so in an oven at 350 degrees.
The color texture, and flavor of
kuri squash is perfect
for pureed soups.
I decided the two
kuri squashes (one red and one blue) would have to stand in
for pumpkin this year.

Kuri asked themselves the following questions when considering which colleagues to include, which works to put together, and what issues would be the best to address:
For Gabriel
Kuri, «objects» must be understood to refer to both the set of objects produced by our society, but also the totality of the objects «produced» by nature.
Within the exhibition space itself, Gabriel
Kuri orchestrates the layout of the objects and sculptures presented against paper backdrops, as though the installation as a whole was waiting to be photographed
for promotion in a lifestyle magazine.
Finally, as an extension of the exhibition, Gabriel
Kuri has published an artist book, which is a repertoire of images of various French brands of mineral water, photographed like commercial products, but with their bottles filled with a less than inviting yellowish liquid, a thinly disguised metaphor
for the economic stakes hidden behind the commercialisation of our vital resources.
In the Pavillon des Sources, an architecture typical of the late 19th century that served as a stall
for selling the water and its derived products,
Kuri presents a set of sculptures, either office furniture (photocopier, storage closets, folders) covered in layers of tar as though with a second skin.
At the Parc Saint Léger, Gabriel
Kuri presents a significant new collection of sculptures entirely designed
for the space and shown in various locations on site.
Gabriel
Kuri is a Mexican artist who has attracted international critical acclaim
for his work exploring the nature and possibilities of sculpture.
For those of you who saw
Kuri's exhibition at the South London Gallery at the end of last year, you will recognise sculptural forms combining panes of glass, concrete and plywood layered and set upright on wooden pallets, creating index and diagram - like assemblages, offering a counterpoint to the cheeky works upstairs.
For Museion she has curated solo shows that include Monica Bonvicini, Gabriel
Kuri, Isa Genzken, Andro Wekua, VALIE EXPORT and Carl Andre.
After 10 years of living and working as an artist in Brussels, the 43 - year - old
Kuri moved his family to Los Angeles in August,

Founded in 1999 by Mónica Manzutto and José
