My pitaya smoothie bowl has toasted cashews which satisfy the crunch - factor for that recipe, but oodles of crunch-less pitaya bowls in Bali (I know, I'm not getting any sympathy) inspired me to create a 100 % grain - free granola.
Pitaya Smoothie Bowl — This pretty hot pink smoothie bowl is made with frozen
pitaya, frozen raspberries, Greek yogurt, almond milk, granola, chia seeds, pomegranate seeds and fresh raspberries.
It is also known as
a pitaya or pitahaya, although it is commonly referred to as «dragon fruit» in English due to its distinctive look.
These pitaya breakfast bowls are such a fun and healthy breakfast!
Jugos has an extensive menu of juice, smoothies, acai bowls,
pitaya bowls, chia seed pudding and other plant - based foods.
Spoon
pitaya mixture about 1/3 the way up the popsicle molds.
In addition to their acai bowl they have some other smoothie bowls (I think I like
their pitaya bowl better than the acai bowl actually) and some delicious refrigerated raw foods.
It's also referred to as

It would not be a stretch to say I had my fair share of
pitaya bowls while living in Bali.

Tropical Strawberry
Pitaya Smoothie — This pretty in pink dragonfruit smoothie is packed with strawberry, mango, and pineapple.
The Pitaya (as it is know in Mexico, or Fire Dragon Fruit (huǒ lóng guǒ in Mandarin Chinese) as it is known here in Taiwan, is a member of the cactus family.
I think I started pretty much every day of our trip with either yogurt and granola and fresh fruit, or my new favorite discovery —

For dragonfruit, depends on the size:) The frozen
pitaya I use is bright pink inside, that's the one you want.
It empowers me, as I realize that while enjoying delicious fair trade gourmet products I can also be supporting single mothers in Nicaragua, for example (in case of
Pitaya Plus raw frozen dragonfruit).
For the actual cake itself, I made a vanilla and
pitaya sponge which I adapted from the super talented Amy Levin's Mini Coffee Crunch Layer Cakes — who if you don't follow by the way, then you better had like RIGHT NOW!
The buttercream was coloured using a combination Raw Nice's Blue Spirulina and
Pitaya Powder.
Divide your remaining buttercream into ⅚ different bowls and add in varying amounts of blue spirulina and
pitaya powder until you reach the colours you want, then add your flavourings.
I didn't manage to snap a picture of the inside of the cake due to all the birthday fun but I used
the pitaya powder to create an ombre effect throughout the layers.
Blend together your nut milk, melted coconut oil, coconut sugar, soaked cashews, mesquite, vanilla, salt, and
pitaya powder until smooth.
The mango and
pitaya smoothie bowls are wonderfully delicious (with no granola).

To make this Vitamin C Strawberry Blast: Blend up 6 strawberries + 1 orange (peeled) + 1 banana + 1 small piece of frozen
pitaya (optional) + 1 tablespoon ground flax + 1 heaping teaspoon maca powder + 1 cup almond milk and a handful of ice.
