Levain is made
from a pure sourdough starter that is made with a mix of flour and water, and creates an environment conducive to growth of wild yeast in the flour (and to a smaller extent in the air).
This olive bread is naturally leavened with a sponge that is started
from a piece of our whole wheat
levain.

from focaccia bread with big, yeasty holes that's crispy on the outside and pillowy on the inside to bagels that hold their shape, yeasted donuts that rise straight up instead of out and pure
levain sourdough bread that rises high as the sky, all without any commercial yeast.
It takes THREE days for these babies to be on your table
from when you start your
levain to baking and cooling.
And last, but not least, if you've made these and they have sat in an airtight container, or are no longer still just a little warm
from the oven, you really should reheat them ever - so - slightly to get the true
Levain texture and taste.
