I reduced the sugar a
little bit to 2/3 cup, and made mostly
mini muffins, baked for 14 minutes.
When I coat my pans for baked goods, especially
mini muffins pans which can be a
little finicky, I use a fool - proof tip to help my
muffins release right out of the pan so they don't stick without dousing them in oil or butter.

Little cocoa bites... I made a version with pure cocoa butter and vanilla powder as a mild creamy base and a way to hold the berries together, then I went on to melt some dark chocolate into the bottom of
mini muffin cups and topping with chopped macadamias and inca berries.
Just wanted to add that I made these in a *
mini *
muffin pan and at 13 minutes they came out soft on the outside, no crust effect (good for teeny kids), and at 16 minutes they started to have a
little crunchiness on the outside (nice for adults if eating hot).
I made lastnight in a
mini muffin pan & they turned out great I just cut
little holes in them and flattened them out a
little so more of a doughnut look, everyone loves them!
Form the mixture into a
little balls and place in your

1 pie crust makes crusts for a full 24
mini muffin pan, so make 2 pans (48
little pies).
Since I wanted to make

mini muffin pan, I ditched the rolling pin and pressed the dough into each

Easy to make... especially if you warm your almond butter a tad in the microwave to make it a
little easier to spread into the
mini muffin cups!
Makes 24
mini muffins and a bit — With the extra batter I had, I baked a
little cake in a small casserole dish.
Make these in a
mini muffin pan for a cute
little appetizer or in a regular
muffin pan for a fancy main....
I also really like turning this recipe into
muffins which I can easily grab on my way to work in the mornings or even
little mini loaves which are great for portion control.
Incidentally I had been looking at an Everyday Food recipe for
little deep dish pizzas made in a
muffin tin, so these
Mini Deep - Dish Pizzas that I'm sharing with you is sort of a combination of the two recipes.
You make a pretty simple granola mix, and then instead of spreading it out on a sheet to bake, you press into
mini muffin (or full sized
muffin) tins to bake into these cute
little bowls.
It may be a
little runnier but... I use a
mini muffin tin and let these set up in the freezer anyway then put in a freezer bag and store in the freezer.
Roll the mixture into
little balls with your fingers and place into petits - fours cases or
mini muffin cups.

minis for an easy
little snack because these really do fill you up quick and they'll take less time to dehydrate.
Press this dough into 12
little balls and then press these balls into 12
mini muffin cups (the ones they sell at the store for truffles).
Preheat your oven to 375 degrees and grease
mini muffin pans (I prefer not to use paper liners, which typically stick quite a bit to the
muffins and
little kids can't get them off very easily.)

mini muffin cups and slightly press down a
