lots of cheese, and a perfectly chewy whole - wheat crust, this is truly the perfect
winter pizza!
I made this last night (with
winter squash instead
of pumpkin because we had a
lot) and it is FANTASTIC.
All together, both because these are comforting yet wholesome, and packed full
of all the antioxidant nutrients (vitamins A, E, selenium, zinc), B - vitamins, magnesium, and iron that athletes need, I think these are great with the
winter squash topping for after workout meals (that's running for me), or perhaps just to share with a friend or loved one when you both need good conversation and
lots of late -
winter nourishment.
I make a similar meatless chili in a crockpot (I make a
LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans
of (low sodium, rinsed) beans (2 kidney, 1 each
of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall /
winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can
of organic PUMPKIN PUREE!
In addition I like it with
lots of herbs, or an herby drizzle, tossed with pan-seared greens, punctuate with extra-roasted tiny pieces
of winter squash, in broths...
I roast A
LOT of squash and pumpkin in the
winter and have been a little bored recently with my standard flavor combos.
But
winter squash is also great because it keeps forever, so we don't feel a whole
lot of time pressure to use it.
In this luscious cool - weather soup, onions, garlic,
winter squash, and silken tofu are all enveloped in the familiar flavor
of potatoes, making this a wonderful vehicle for getting a
lot of nourishing ingredients into eaters
of all ages.

lot of broccoli, cabbage, cauliflower, sweet potatoes,
winter squash, beets, and tubers.
They probably ate a
lot of potatoes, turnips, carrots, beets and
winter squash in the colder months.
Baked
winter squash seasoned like pumpkin pie with no sweetener,
winter squash or zucchini fritters make with
lots of spices and almond flour and baked.
