Make chili paste: In a small bowl mix the chili powder, chipotle chili powder, ground cumin, oregano, thyme, and ground coriander seeds.
I figured out that it's the lack of acidity which is easily remedied by using crushed tomatoes or the like when
making the chili paste.
Another option when making Kimchi is to use a seeded minced jalapeno or Serrano chili pepper or two instead of

chili paste, and I've done it before, but it is pretty time consuming.
The seasoning for baechu kimchi is usually
made with a starter rice flour
