Middle Eastern recipes because of the unusual flavors.
I haven't had the chance to do much traveling to try authentic foods from different parts of the world, but I really love
the Middle Eastern recipes I've tried, and all of the wonderful spices!!

another Middle Eastern recipe.

I actually thought of this while we were away, when my brother and I were whipping up a batch of homemade za'atar for a
Middle Eastern dinner we were making, but I didn't note down the
recipe or take pictures, so I made it again when we got home and am very glad to have a jar of it in the pantry.
I'm fortunate to have a
Middle Eastern grocery / deli less than a mile away where I can get freshly made pittas that would be perfect for this
recipe.

I should say that the original
recipe came from Claudia Roden's book on
Middle Eastern cooking.
Today's
recipe is a little nod to the grain's origins with a slightly
Middle Eastern feel.
Since I had recently written about za'atar, my favorite
Middle Eastern spice, I thought this
recipe would be a great follow - up as it includes another traditional
Middle Eastern ingredient, pomegranate molasses.
The narrow Asian or
Middle Eastern eggplants work best using this method of first cooking them on open fire in the two
recipes below.
1 cup / 240 ml raw chickpeas / garbanzo beans 1 cup / 240 ml raw wheat berries, preferably freekeh (green wheat berries, buy in
middle eastern store) or use kamut, spelt berries or barley 2 aubergines / eggplants 2 tbsp cold - pressed olive oil or coconut oil 1 tsp cumin seeds 1 tsp ground sumac (buy in
middle eastern store) 4 tomatoes 1 handful fresh flat - leaf parsley 2 tbsp cold - pressed olive oil 1/2 lemon, juice 2 - 3 tbsp Za'atar spice blend (
recipe below) 1/2 cup (150 g) goat's cheese, crumbled
At the intimate dinner, that translated into a family - style feast of bright
Middle Eastern flavors: those springy falafel (see the
recipe), an herby cauliflower salad flecked with nigella seeds (see the
recipe), homemade pita to tear apart and plunge into a spinach - and - pine nut dip.
Thanks for this - I've been wanting a
recipe for za'atar for a while so I could control the quantities - there are great
Middle Eastern markets here in London but I could never use as much as you get with the storebought mixes!
Also, one may find at
middle eastern specialty stores another blend of za'atar known as Aleppine Za'atar which is a special much sweeter
recipe developed in Aleppo, Syria and equally delicious.
