Today we're using a
mix of
smoked salmon and potato, but you can also do other kinds of fish such as tinned tuna or even salt cod, if you'd like to add a Mediterranean touch.

mix in a separate bowl / Steam 1/2 pound
salmon fillet — place fresh
salmon in an inch or so of seasoned, simmering water, cover and cook gently until
salmon flakes apart easily, 5 - 7 minutes / Remove
salmon, flake it apart into bowl containing the onion mixture / Stir together 5 eggs, 1 1/2 cups whole milk / Season eggs with 1 teaspoon salt & 1/2 teaspoon pepper / Measure 6 oz.
Add 4 ounces of cream cheese into a bowl, dice 4 ounces of
smoked salmon, which is about 2 slices (the easiest way to dice up
smoked salmon is to roll up each slice like a cigar, cut it right down the middle and then thinly slice it), then add the diced
smoked salmon to the bowl with the cream cheese, next add 1/2 teaspoon of dried dill, 1/2 teaspoon of onion powder, season with freshly cracked black pepper and
mix everything together until well
mixed, cover with seran wrap and add to the fridge for at least 15 minutes
100 grams (3.5 oz) butter 1 medium onion 1 tablespoon flour (or substitute with arrowroot if gluten free) 1 cup fish stock 1 cup milk 1 cup sweetcorn 1 medium potato, diced into small cubes 2 tins
smoked herring fillets (or equivalent amount of

mixed seafood of your choice (I usually use a small tin of
salmon, some shrimp meat and bay scallops) 1/2 cup cream Salt and pepper (to taste)
This sando had
salmon salad on one half (canned
salmon mixed with celery, mayo, mustard, S+P) with
smoked hummus on the other half.
Add dill, spice
mix, and
smoked salmon just before serving.
To serve, layer potatoes with pieces of
smoked salmon, spice
mix, and dill on a platter and drizzle with more oil.

The resort is smallish 4 story 4 blocks enclosing the pool area with palms and large gum trees a bar and casual dining was buy the pool with tasty morsels of well priced snacks and lunch menu and very alert to remove the items when you where finish eating ether by the pool or by tables near the bar the breakfast buffet was at first glance a bit simple but as you looked closer they had extra bits like

mixed nuts and roasted coconuts for your cereal eggs to order or from the buffet and of course the usual cooked breakfast stuff for the price of $ 31.50 kids half price the restaurant had excellent dinner I can highly recommended the whole barramundi you can take food to your room but you must put the empty plates outside your door as your apartment is not owned buy the hotel you can order food in the lobby.
