I couldn't find medjool dates, so I find soaking regular pitted dates in boiling water for a few mins before blending them with the sweet potato, works a treat.

Soaking the dates shouldn't change the flavour but I would try making them with dry dates to see if that makes a difference.

Love... We've a few times now, and soaked the cut dates 5 mins prior or not... added half a slice of orange on top of each wedge sprinkled with sugar, added more zest and orange... All combinations work beautifully, depending on your mood... Perfect with a hot cup of tea x
Wouldn't it be better to blend the dates along with the soak water instead of dumping it out and adding fresh water?
A few chunks in the cupcake batter will not matter, but for the frosting you can try soaking the dates in the non-dairy milk before blending to make it easier to blend and smoother.
