not exactly the pork product I associate with the city, but who am I to question these things — was grilled to a perfect, lightly charred crisp then topped with peppery wild arugula and drizzled so - very - lightly with an aged balsamic vinegar, the kind that is thick, dark and almost syrupy,

bacon fat that I used in the recipe, if your
bacon doesn't yield enough you can add just a little bit of water to substitute it out or you can just leave it
as is.
Here are some things I learned: 1) Soaking two rice paper pieces together didn't work for me — a middle section was inevitably
not wet and I got air bubbles in my
bacon as a result.
