I decided to adapt my Blueberry
Oatmeal Breakfast Bar recipe, by adding a creamy, delicious pumpkin
pie filling and adding crunchy pecans to the top.
Since the trimmed pieces aren't necessarily «show» material, but still delicious, I like to use these for crumbles on ice cream, as a cookie crumb in a
pie crust, even in combination with some granola as a tasty
breakfast oatmeal stir - in.
This gluten free, pecan
pie oatmeal is easy to make, delicious and the perfect healthy
breakfast for moms and kids!

Alyssa, This morning I made my current favorite
breakfast oatmeal with 50 % quinoa flakes and 50 % quick oats (I added canned pumpkin, pumpkin
pie spice, and topped with bananas and pecans)-- It turned out great in the microwave — I didn't have any coconut flour - plan to get some soon — but just with the added quinoa it is now lunch time and I am still not hungry!
