muffins actually fill you up!
I only say that
because I'm out of
oatmeal but I've been wanting to make
muffins badly.
This easy microwave
oatmeal muffin is another one of my favorites - if only I knew how to make it back in the day
because it takes literally minutes!
This breakfast bake will make a believer (read: an
oatmeal lover) out of even the biggest critic... mostly
because it has the fluffy and moist texture of a cake /
muffin rather than the gloopy and wet (mmmm) texture that's usually associated with
oatmeal...
BUT — I took one for the team (and baked in the middle of the night
because who can sleep in this weather) and made these uber delicious tahini pumpkin
muffins with pepita
oatmeal crumble.
Because these are breakfast cookies, not dessert cookies, they only have half the natural sweetener as compared to my regular
oatmeal cookie recipes... Which gives them a similar sweetness level to
muffins.
Because of the mellow vanilla flavor of Orgain Protein Powder, I can go beyond smoothies and shakes by mixing it in
muffin recipes, pancakes, cereal,
oatmeal and more.
And if you recognize some of the base ingredients it's
because this uses my standard
oatmeal blender
muffin base with flavor tweaks.
