I normally made this family favorite by steaming in a frying
pan with a little bit of butter - but last
fall I discovered
roasting and eating asparagus this way took on a whole new dimension!
Place the
roast in a large
pan with water to cover and simmer until tender and the meat begins to
fall apart, about 3 to 4 hours.
I started these with a homemade sauce that came from combining some scratch tomato paste I had from leftover tomatoes this summer; adding a small jar of slow
roasted tomatoes I also had canned in the
fall and infusing it with more flavour by adding fresh garlic, salt, pepper and some fresh oregano I have growing under a lamp for the winter, mixing and heating it all together in a
pan.

If the meat is still tough (doesn't start to
fall apart when you stick the fork in the middle) return the
pan to the oven and
roast for another hour.
Directions: Rinse quinoa, allow to drain thoroughly, place in boiling salted water and simmer with lid on for 15 — 20 minutes, until tender / Remove from heat and let sit with lid on for 5 more minutes / Spoon and spread quinoa onto a cookie sheet / Let it cool and dry out a bit, then put quinoa in a large bowl / While quinoa is cooking, place squash ribbons and leeks on one or two cookie sheets, drizzle with 2 — 3 T olive oil, sprinkle with salt and pepper, toss and spread evenly across the
pan /
Roast at 425 degrees for 12 — 15 minutes / When tender, remove from oven and let cool / My squash ribbons sort of
fell apart at this point.
Transfer
pan to oven and
roast until meat is very tender and
falling off the bone (an instant - read thermometer inserted into the center without touching the bone will read 195 °), about 5 1/2 hours.
