The orzo,
peas, and feta paired quite well, and I
liked the balsamic dressing, as opposed to a more standard mayo - based pasta
salad.
Otherwise this is a pretty basic
salad recipe with a basic vinaigrette, but I think that the risoni made it special — we really
liked how it's texture combined with the floury chick
peas and the crunchy veggies.
See, the curry takes to the mayo in this
salad like peas to carrots, the celery and shallot add an awesome crunch, and the raisins provide a haunting sweetness that in turn makes the curry taste even better.
I think my mom has a recipe, but the
salad layers goes something
like this: lettuce, red and yellow bell peppers, eggs, green
peas, red onions, celery, Ranch dressing, cheddar cheese.
