Sweet Potato Toast with
Peanut Butter and Bananas served with sliced Oranges and Ginger Turmeric Latte.

It's just a few ingredients but they all
serve a purpose — a big
serving of baby spinach so your smoothie is packed with vitamins, a frozen
banana to add some sweetness
and make it nice
and creamy, milk,
and peanut butter.
In the summer, we often make chocolate
peanut butter soft
serve out of frozen
bananas (seriously, 3 simple
and healthy ingredients!)
As I've mentioned, this
banana bread is great toasted
and served with jam, nutella,
peanut butter,
butter, honey, ricotta,
banana slices, mashed
banana, melted chocolate, desiccated coconut, coconut cream, ok you get the picture.
I tweaked her recipe a little
and also made
peanut butter banana soft
serve to go with them for a gathering of friends one time.
Serve the waffles straight away with the caramelised
banana, drizzle of
peanut butter, maple syrup
and other toppings of your choice.
When ready to
serve, stir the pudding
and top with a few
banana slices, drizzle * with powdered
peanut butter and add chopped
peanuts.

Rather than whipping up a toasted
peanut butter and banana sandwich, I decided to bake crunchy
peanut butter banana bread to
serve as this week's homemade snack for J.
and me.

Base Ingredients: 1/2 cup whole oats (or quick cook) 1 tbsp chia seeds 1 tsp cinnamon 1 tsp ground vanilla bean or (2 tsp of vanilla extract) 3/4 cup almond or coconut milk 1 tbsp natural
peanut butter (or any other nut
butter) 1 tsp of maple syrup 1 tbsp of pecans, crushed 1/2 ripe
banana, mashed Toppings: Add extra pecans, a drizzle of nut
butter,
banana slices, cacao nibs
and / or shredded coconut to
serve.

served in a muffin tin:
Peanut butter and banana sandwiches, green apples, persimmon slices, vanilla yogurt with pearl...
The favorite among my own kids
and all of the kids I have
served this to is the
peanut butter (substitute any nut
butter)
and banana roll - up: simply spread PB
and sliced
banana on tortilla, roll
and slice in 1 inch pieces.
Save: I ate a veggie burger
and lentil salad, followed by
peanut butter and banana soft
serve for a snack.
