Now this dish honestly tastes just as good cold too, especially if you like crisp raw veggies, but since I prefer my
zoodles having that «pasta - like» feel, I simply sauteed mine for a few minutes on the stove and then just tossed them with the
pesto sauce.
Very good recipe, the
zoodles (and especially the
pesto) were delicious.
I grilled jumbo shrimp marinated in lemon and garlic and topped the
zoodles slathered in this
pesto.
Do you think the
zoodles already mixed with
pesto will hold up well for a meal prep so that this could be served for a few lunches throughout the week?
My dish came out pretty good, just the
zoodles were a big wet mess with the
pesto.

Basically, this cashew pea
pesto was made for the noodles, which is hilarious since I wasn't planning to make
zoodles when I made this
pesto.
So instead of pasta, make «
zoodles» out of zucchini and serve with tomato sauce or
pesto (and drop in a few mixed veggies for still more servings!)
