Once the Grill Dome temperature is stabilized, place the chicken, skin side up, on the cooking grate and smoke - cook, with the Grill Dome cover down, for 50 to 60 minutes or until the thigh has an internal temperature of 165 degrees F. (If desired, the chicken may be brushed with your favorite barbecue sauce during the last 10 minutes of cooking.)

Place chicken on the grill, skin side down and weight down with a cast iron skillet so the chicken remains flat.

Sprinkle the chicken breasts with the remaining 1/4 teaspoon salt and pepper and place in the hot pan skin side down and let sear for 3 - 4 minutes and then remove the chicken from the pan and onto a plate.

Carefully slip the thyme and garlic underneath the skin and place the lemon in the cavity of the chicken.

Place the chicken breasts skin - sides down on the grill, and cook, flipping once, until they have reached the internal temperature of 165º, 8 minutes on each side.

Sprinkle the chicken thighs with the salt and place them skin - side down in the skillet.

Remove the backbone and place the chicken on a cutting board skin side up.

Place chicken in a large baking dish or plastic bag, loosen the skin from the breast and legs of the chicken and, using your hands, spread a good part of the mixture underneath.

Place chicken, breast side up, on top of vegetables and roast until skin becomes brown and vegetables are starting to get tender, about 1 hour.

Season the chicken with salt, place in the skillet skin side down and cook until golden - brown, about 7 minutes on each side; transfer to a plate.

Place the chicken, skin side down in the pan and sear until golden brown, about 3 to 4 minutes.

In a mixing bowl, add the chicken, white wine vinegar, lime juice, 1/2 teaspoon rosemary (or 1 sprig of rosemary leaves), 2 pinches dried thyme, 2 pinches dried sage, 4 - 5 cloves of garlic (place the garlic pod on a clean surface, place the blade of a knife over it and hit the blade with the heel of your palm, crushing it lightly) with the skin on — it roasts ever so beautifully this way, 1/2 teaspoon sea salt, 1 tablespoon olive oil, and 1/2 teaspoon pepper powder, and mix them all up.

Add oil to Instant Pot; working in batches, place chicken, skin side down in oil, and cook until golden brown, about 4 minutes.

Place chicken, skin side down, on grill rack covering left burner.

Place chicken, skin side up, on oiled grill grate.

Place chicken in the pan skin - side - down, a few pieces at a time and cook for 4 - 5 minutes or until golden brown.

Place breasts skin side up in preheated oven and cook until chicken is done all the way through.

Place chicken thighs, skin side up, on a work surface and slash each crosswise at 3/4» intervals down to the bone.

Place chicken wings on smoker rack in a single layer and smoke until skin is golden brown and shiny, about 1 hour.

Place chicken thighs with skin side down on baking sheet.

Use tongs to carefully remove chicken from pot and place, skin side up, on a rimmed baking sheet.

Transfer chicken to a plate, placing skin side up.

Working in batches if necessary, place the chicken, skin side - down in the Dutch oven and sear until deep golden brown, about 4 - 5 minutes.

Place the chicken wings onto the baking sheet and roast until the skin is blistered and dark brown, 1 to 1 1/2 hours.
