I bought a bag a few months ago but I have only
used it in my flourless oatmeal
raisin cookies, which only requires a small amount as a binder.
Last night I baked some vegan Oatmeal
Raisin Cookies,
using a recipe from (you guessed it), Eat Drink and Be Vegan!
I was convinced I could
use Matzolah in place of oats to make Passover «oatmeal»
raisin cookies, and I did!
If you want the
cookies to spread more and be flatter, then
use less oatmeal,
raisins, and nuts, but then it wouldn't be the same
cookie and you would be better off finding a brown sugar
cookie.
I tend to
use them mostly in in cakes and muffins - they're vital in carrot cake in my opinion and I love both banana bread and oaty -
raisin cookies including walnuts in the mix.
I've been obsessed with making carrot -
raisin cookies since eating them at the NY Union Square Farmers Market and have
used them to convert at least one
cookie hater!

use 70 % dark or more — for vegan

use half whole - wheat flour and add 2 cups of
