One of the more interesting products I'm working on now is a fresh spring
roll made
with rice paper.
It also came
with rice paper wraps and a bowl of hot water so you could make your own fresh
rolls.
Those were SO good that I ended up stuffing the leftovers into
rice paper rolls the next day for lunch, complete
with said dipping sauce.
The spread included Heather's famous guacamole on tortillas withThe Piggery's chorizo and Lively Run goat cheese; pears wrapped
with gorgonzola and The Piggery's deli ham; apples
with vegan cranberry chutney; shredded winter salad in
rice paper rolls; out - of - this - world dressing (or dip!)

To prepare your spring
rolls, filling a large shallow bowl or plate
with warm water and have your
rice paper wrappers, vegetables and tofu close by.

Your
rice paper rolls will probably come
with directions, but I just put the filling in the middle of the
rolls, folded the top and bottom over the filling, and then began to
roll and tighten from one side to the other.
Wrap the
roll in a second
rice paper, brush
with olive oil and place seam side down on parchment
paper lined baking tray
I lost two
rice paper roll wrappers to the garbage before I finally got the hang of working
with them.
I enjoy making and eating Summer
Rolls but I am often left
with many cracked or broken sheets of
rice paper.

My best friend went for the Alchemy
Rolls (
rice paper wraps
with fresh carrots, avocado, sunflower sprouts, basil, cilantro, mint and cashews served
with creamy Thai dressing) and after tasting them, I can agree that they were fantastic as they were light but packed
with yummy, fresh ingredients.
I was getting a little skeptical
with the sweet potato and basil combination (wrapped in a
rice paper with vermicelli)... but interestingly it turned out to be the better tasting
roll out of the two.

To make each
roll, simply wet a sheet of
rice paper with warm water and lay it on a flat working surface, like a cutting board.

I love tofu in many forms, but I think my favorite is classic
rice paper summer
rolls with peanut or chili sauce to dip.
While Vietnam shares many of its dishes
with neighboring countries, including chao (
rice congee) and many of its sticky
rice sweet treats,
rice paper rolls and banh xeo as far as I know are quintessentially Vietnamese.
Most recently, guests have enjoyed lessons on how to prepare summer
rolls with rice paper, fresh veggies and a peanut dipping; Asian - style chips and dip
with fire - roasted chili, veggies and crisp wonton chips; Soju oyster shots; spring salads
with spike - roasted chicken and sake - marinated fish; as well as Chinese crepes
with crab and tofu and herb salads.

I made some raw spring
rolls (the
rice paper wet
with water kind) filled
with shredded cabbage, carrot, parsnip, chopped cilantro, tamari, lemon, and ginger juice, and my husband had the WORST gas the next day (I had some too, but it was milder)... that was the only thing we could think of and we're afraid of raw cabbage now, unless it's fermented as in sauerkraut!
