The picadillo is flavorful, hard to mess up even when swapping out ingredients and changing amount of any given ingredient — it freezes well, can serve with noodles or rice, over garlicky Texas Toast, cornbread, wrapped in a flour tortilla, or by itself (we have an Atkins dieter in our midst who enjoys it straight up).

Serve this flavorful chunky salsa with corn chips or in steamed corn tortillas with rice, or on top of salads, hash browns, or baked or mashed potatoes.

To assemble the burritos, spread 1/4 cup of the bean mixture in the center of the tortilla, add 1/4 cup of brown rice, and top with some 1/4 cup of the cheese mixture.

In Sinaloa flour tortillas are king and Chilorio is most typically served with a thick stack of warm flour tortillas but of course you could use corn tortillas and make it into tacos or serve with steamed rice some hunks of avocado, and a slaw or salad on top.

Once I shredded the chicken it soaked up all the liquid so instead of chili we had it in tortillas with a little cheese one night and over rice the next night.
