So, I made this relatively easy but super impressive meal, Bruschetta Grilled
Chicken Breasts with Roasted Vegetable and Pesto Pasta Salad.
These
roasted bone - in
chicken breasts with a light, citrusy sauce were inspired by Marcie Turney's trip to the Yucatán.
On the first go - round, I aggressively seasoned two skin - on, bone - in
chicken breasts with a dried spice rub, then
roasted them in a very hot oven, flattened beneath the weight of a second cast iron skillet.
I wholeheartedly agree
with the suggestions about a slowcooker and a George Forman Health Grill - during the winter I use our slowcooker at least once a week, and the grill is used all year round (for fish steaks,
chicken breasts, chops, and fabulous
roasted veggies).
To my surprise, the boneless
breasts that I sauted were just as tender and delicate in texture and
with the same flavor as the slow
roasted chicken breast on the bone that I've slow
roasted.
