I made the following changes that I believe improved it to my taste: 2 c. red lentils to create a thicker consistency,
curry powder, additional bay leaves fresh from the tree, a tomato chopped, 1 can of
roasted red tomatoes (diced), turmeric, extra carrot, celery and garlic sautéed in a combo of
coconut oil / olive oil.
Flavorful
roasted cauliflower puree blended with red
curry paste and creamy
coconut milk create a rich and spicy soup that everyone will love!
Spoon the
curry into bowls, garnish with
roasted cashew nuts and serve with the rice, and (optional) garlic rotis and tomato and
coconut sambal.

curry paste (I used Thai Kitchen brand) * 1 large organic sweet potato, chopped into bite - sized pieces * 1 - 2 cups turkey or chicken stock, preferably homemade * 1 tablespoon palm sugar or organic dark brown sugar * 2 tablespoons fish sauce (I used Thai Kitchen brand) * 1 cup
roast turkey, shredded or chopped into bite - sized pieces * 6 kaffir lime leaves (I used dried ones from Kalystyans in NYC) * 1 red or green chile pepper, minced * 1 bunch baby bok choy, chopped into bite - sized pieces * 1/2 -1 cup chopped fresh cilantro or Thai basil (or a combination of the two) * fresh lime juice to taste for serving - optional * sriracha or your favorite hot chile sauce for serving (I used my homemade chile garlic sauce)- optional

roasted vegetables (olive or
coconut oil and sea salt is all you need for flavor), whole grains, and lean proteins are what I focus on and then I add flavor with other seasonings (
curry powder, cumin, thyme) or a shake of a healthy condiment.

curry powder 1 can fire -
roasted crushed tomatoes 1 cup vegetable broth 1 can chickpeas 1 cup frozen peas 1 can unsweetened
coconut milk Salt and pepper to taste Fresh chopped cilantro for garnish (optional, but oh so good!)
It's one of my favourite vegetables as there are so many amazing things you can do with it — grate it down and stir through spices and
coconut milk to serve with a spicy
curry,
roast it in olive oil and cumin for a beautiful side or even cut it into cauliflower steaks and bake it in the oven for a really delicious main dish.
