I start out my morning eating a small
plate of fruit, occasionally I sneak the coffee in, for lunch I just
roast a ton of
vegetables and maybe chicken (
roasted cauliflower, broccoli, kale I can just eat endless amounts of) and for dinner just stick to meat and
vegetables.
Other: my WW adapted versions of orange cranberry relish,
roasted orange / pineapple sweet potatoes sprinkled with a bit of ground nuts, and
roasted root
vegetables fill the
plate before I even get to tastes of the rest.
These garlic & parmesan
roasted vegetables are just the sort of side - dish you can eat a whole
plate of.
When the
vegetables are done
roasting, drizzle on the dressing, toss lightly,
plate and serve warm.
I tried a few bites of Scott's, but I was in the mood for lotsa veggies, so I ordered the
vegetable plate, which came with the most incredible green pepper salad, sauteed red cabbage with goat cheese,
roasted red peppers with feta and kale salad.

plate and silverware in Martha's meal, versus HISD's styrofoam tray and flimsy plastic spork, not to mention Martha's fresh
vegetables and
roasted potatoes versus our applesauce and overcooked spinach.
Divide the lettuce onto 4
plates and top with the
roasted vegetables, about 2 tablespoons of goat cheese and a small handful of nuts.
Place
roast vegetables on a
plate and then the lamb chops on top with sour light cream and chives on top.
Arrange some quinoa on each
plate, and top it with some rocket leaves before you finish it with the
roasted hake and
vegetables.
When the zucchini has
roasted, we layer noodles,
roasted vegetables and the ricotta sauce on individual
plates.

We made the ham and fried dough (a favorite from Chris's family) and provided a small cheese
plate, and everyone else brought the rest of the goodies — everything from deviled eggs to
roasted vegetables, mac and cheese to potatoes, and of course, dessert!
