It sounds like it might have been better to lower the temperature even more to get it to bake through without getting too dark; I do find that woven
round challahs can be kind of finicky to get the baking times right.
Straight loaves of braided challah are eaten throughout the year — typically on the Sabbath —
round challahs, often studded with raisins, are served for the New Year and the other High Holidays that follow.
