It comes in a small vacuum sealed block, it lasts in the freezer or fridge for years (good
brands are
SAF or Red Star instant yeasts), and you don't have to bother fussing around blooming it in warm water and all of that business.
I followed the directions exactly and even used a
brand new package of
SAF... it didn't rise.
