One of my favorites is a
jarred salad with Middle Eastern flavor notes.
I've faithfully made
jars of preserved lemons, year after year, and it wasn't until I started experimenting
with salad dressings and sauces that they gained a happy place in my kitchen.
I have a
jar of pickled beet eggs in my refrigerator from our winter CSA box, so I'll have to try making this beautiful
salad with them.
If you want to make this
salad for your weekly meal prep, you can easily roast a double batch of chickpeas (two cans), throw the dressing together in a
jar with an airtight seal then just assemble your
salad whenever you're ready to eat.

I used to eat it right out of the
jar back then too, but my mom also made the most amazing dishes
with it: from mustard crusted rack of lamb, to simple, yet incredibly flavorful
salad dressing.
For Mason
Jar Salad, put the dressing on the bottom, then layer
with diced cheese, onion, olives, peppers, tomatoes and top
with the cucumbers.
I then fill the rest of the
jar with the Sweet Kale
salad mix.
