This sauce has been made repeatedly and added to pretty much everything he eats — quesadillas, tacos, sandwiches, burgers, dips for French fries, you name it!

They are the ideal size for wrap sandwiches or an indulgent ooey - gooey, salsa - topped quesadilla!

After enjoying them as tacos, we had the leftover pork as sandwiches (topped with the slaw) and then used the remaining pork in quesadillas (along with some fresh pineapple).

Note, however, that there will be nothing «queso» about these quesadillas, which are essentially embellished grilled cheese sandwiches made with tortillas (and usually embellished with other ingredients).

I photographed the chicken served on a roll as a sandwich but you could also use it to make quesadillas, top baked potatoes, add protein to mac & cheese, pile on a pizza, fill lettuce wraps (a low carb option!)
