In response to someone who suggested adding
cooking sherry instead of the
wine....
(1 28 oz can of diced tomatoes would be fine) 2 TBL tomato paste 1/4 brown sugar 3 tsp

The
sherry is used as an alternative to Chinese
cooking wine (which contains gluten).
NOTE: At the end of the
cooking I add a splash of amontillado
wine which is a type of dried
sherry.
