socca with tahini and za'atar, an Israeli spice blend with oregano and sesame seeds I fell in love with on a trip to Israel a few years back.

Burmese Chickpea Tofu — If you've ever bought chickpea flour, you know it can be tough figure out what to do
with it other than make
socca — well here's the solution: tofu!
Slide the
socca out of the pan onto a cutting board, slice into pieces, then shower it
with coarse salt, pepper, and a drizzle of olive oil.
You'll most often find
socca cooked street - side on fiery grills, where the resulting flatbread is coarsely chopped and served in a cone

Socca Crust is an allergy - free pizza recipe that everyone will enjoy.
for the shallot + herb
socca (chickpea flatbread): 1 cup of garbanzo bean flour 1 1/4 cups of water 1/4 teaspoon of salt 2 tablespoons of extra virgin olive oil 1 clove of garlic, pressed or minced 1 spring of rosemary, minced a pinch of fresh oregano, minced 1 large shallot, thinly sliced
with a mandolin several cracks of fresh black pepper
Repeat
with remaining 1/2 of the
socca batter.
That would have probably been chickpea overdose
with the
socca and the falafel though!
