This of course tastes delicious, however, it's combination of this
soft base against the crunchy
oat, date and pecan topping that really makes these

muffins, these were fruity, sweet, and
soft — more like a dessert than a breakfast.
The combination of the two creates

soft and cake - like from the coconut flour, while the
oat flour gives them great heartiness, structure, and a slightly nutty flavor.
Just be sure to note that using this homemade
oat + pecan flour will not produce a fluffy,
soft, bakery - style
muffin.
