Some of our favorites that I make are: grilled meat and vegetable kabobs served with naan bread, or veggie hummus wraps that have either a super soft pita bread or a spinach wrap that's slathered with hummus, fresh vegetables, and feta cheese, or there's my personal favorite, Mediterranean burrito bowls that have either Basmati or Jasmine rice, Middle Eastern Salad Shirazi, grilled chicken, and hummus.

It's perfect whenever you're serving a salad alongside something like Asian Chicken Noodle and Spinach Soup or Soba Noodles with Roasted Eggplant.

Whiskey lovers can start their day with Kentucky Bourbon Pancakes (which, when combined with Blueberry Kentucky Bourbon Syrup, call for a formidable 2 cups of bourbon); lunch on a Wilted Spinach Salad with a sweet and sour orange dressing (generously spiked with a half cup of bourbon); tuck into Chicken with Mustard Honey Kentucky Bourbon Sauce and Kentucky Bourbon Acorn Squash for dinner; and end the day with a slice of fruitcake - like Kentucky Bourbon Cake.

Lean green meals: Barley Risotto, Fish green curry, Noodle salad with Asian vinaigrette, Quinoa burgers with habanero mayo, Curried coconut broccoli soup, Quinoa stir - fry, Baked chicken fingers with spicy mayo, Asian quinoa salad, Cauliflower salad, Mac and cheese, Spinach and chive mushroom pasta, Roasted veggies, Oven roasted chicken fajitas, Creamy kale tomato pasta, Cauliflower and thyme soup, Mushroom kale chicken pasta, Mahi Mahi in tomato sauce, Tofu stir - fry, Asparagus and tomato quinoa salad, Lentil and arugula salad, Asian cabbage salad, Kale mushroom flat bread pizza, Rice noodles with tofu.

A typical full day of eating for me looks like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit of protein with it.

How about a quinoa salad with spinach, smoked chicken, cranberries, lime juice & Parmezan cheese?

I used grilled chicken instead of fried, loaded the base of the salad with spinach, broccoli and cucumber, and topped it with some cashews for added crunch and nutrition.
