Today I am bringing you a twist on the regular quiche recipe by using Spaghetti
Squash as the crust to up the nutritional value and decrease the fat and calories.

Last night for dinner I cooked up leftover butternut
squash curry and turned it plus the delicious eggs into a quiche using shredded sweet potatoes
as a
crust.

as the perfect base to layer up tomatoes, zucchini and
squash.
Spread the chicken mixture onto bread, cut
crusts off and then into fingers or triangles with a sharp serrated knife (being careful not to
squash the bread
as you cut).
Gobble up roasted turkey, herb -
crusted prime rib and glazed pit ham, and many other Thanksgiving favorites, along with an incredible list of other sumptuous dishes such
as saffron rice with shrimp, mussels and clams, Boursin and sundried tomato stuffed salmon, winter
squash ravioli with tarragon - champagne cream.
