The Google I / O version of the Tab doesn't have Samsung's TouchWiz UX interface; this is a «Google Experience»
tablet with the
stock Honeycomb interface, including
Honeycomb versions of apps like Google Maps and the new Music Beta interface and just a couple of extra apps.
Stock Android 3.0 on both devices could mean that Google has not given Samsung and Motorola enough time to develop their own customizations for the
tablets, which in turn could mean that Google is yet to put the finishing touches on
Honeycomb (hence why no exact shipping date has been announced for the Xoom and Tab 10.1).
The build quality of Motorola's
tablet definitely seems more sturdy and superior to the competitors although the software seemed a bit behind (all 3 run
stock Honeycomb).
Toshiba is missing a trick with the Excite 10 LE
tablet though, which comes with
stock Android 3.2

At Mobile World Congress this year we're seeing a slew of new
Honeycomb tablets and, for better or worse, they all have the same
stock Android 3.0 UI and software on them.
The keyboard appears to occupy about the same depth as the
stock Honeycomb keyboard, but with the added benefit of the number row (a native first among the Android 3.0
tablets).
If you're familiar with
stock Honeycomb, the UI on the
Tablet S would look almost unrecognizable as
Honeycomb.
