Tabasco chiles are not grown commercially in the U.S. except for some grown for seed by McIlhenny Company on Avery Island, LA.

However, pursuant to the McIlhenny Companys acknowledgement, the undisputed fact remains that Maunsel Whites Concentrated Extract of Tobasco Sauce was the original hot pepper sauce made with tobasco /
tabasco chiles and the first sold commercially in the United States.
White was among the first in the nation to market a sauce of
Tabasco chiles.
That year was also important in the history of hot sauces because it marked the first recorded crop of
tabasco chiles, the vital ingredient of McIlhenny Company's Tabasco Pepper Sauce.
All three ingredients were readily available on Avery Island: salt, cane sugar juice (vinegar), and
tabasco chiles.
From that time on, only the McIlhenny sauce could be called «Tabasco,» and competitors were reduced to merely including
tabasco chiles in their list of ingredients.
After harvest, whole
tabasco chiles are crushed in a hammer mill; salt is added in the amount of 8 pounds of salt for every 100 pounds of chiles.
However, that experience taught the family not to depend solely upon
tabasco chiles grown in Louisiana.
In 1898, another Louisiana entrepreneur (and former McIlhenny employee) named B. F. Trappey began growing
tabasco chiles from Avery Island seed.
Malagueta peppers, Capsicum frutescens, are cousins to
the tabasco chile and are truly the most distinctive spicy characteristic of Brazilian cooking.
Most sources state that the birdseye is Capsicum frutescens, making it a relative of
the tabasco chile.
Further, there is a significant gap in time in McIlhenny family lore where the Mexican - American War ended in 1848 and when Edmund McIlhenny planted his first
tabasco chile crop.
Emma Jean Cervantes, president of Cervantes Enterprises, shows a stand of
Tabasco chile grown in an experimental drip irrigation field for the McElhenny Company.
The difficulty with such a theory is the fact that the principal chile of Brazil was Capsicum chinense, yet that species is rare today in India — the chinense growing in India may actually be an extreme form of frutescens,
the tabasco chile.
The African Malagueta (Aframomum Malagueta) is a reed - like plant with red berries, while the Brazilian Malagueta is very similar to
the tabasco chile.
The malagueta chile used in the first basting sauce is a relative of
the tabasco chile and is a favorite in Brazil.

We love green
chile, I prefer the milder side, while Matt prefers the heat so we often use a mix and I hand him his bottle of Chipotle
Tabasco.
