In honor of my love of Thai food (and the fact that I got
some Thai curry paste from the Reading Terminal back when I went to Philly), I decided to adapt this recipe in accordance to what I had in my fridge / kitchen!
I do that with my BBQ sauce and
Thai curry paste.

I did make a few minor modifications though (
Thai curry paste instead of Indian and addition of kale).

some thai curry paste, coconut milk, broth and chopped cilantro stems, then throw in a handful of noodles, chop some additional cilantro and scallion over top and make really fast «laksa».
