This
recipe gave me the best idea — I want to try and
do pad
thai with spaghetti squash.
I first made these with quick pickled
thai bird chilies, which I thought would tame the heat, but it didn't make much difference, so I've left that out of the
recipe.
I also have a standard glazed pecan
recipe that we love, but don't be afraid to mix it up by adding extra pepper or even making something with a stronger flavor like
Thai Curry Cashews.
* 1 1/4 pounds boneless, skinless fish fillets (any variety), at least 1 inch thick (I used wild Alaskan sablefish aka black cod that I purchased from Vital Choice) * 1 tablespoon organic coconut oil (the
recipe calls for grapeseed oil but I prefer coconut oil) * 1/2 medium red onion, finely chopped * 1 teaspoon grated fresh ginger * 2 garlic cloves, minced or pressed * 1 pint grape tomatoes, cut in half if large * 1 teaspoon ground cumin * 1/2 teaspoon sea salt * 1/4 teaspoon black pepper * 1/2 teaspoon cayenne pepper (I omitted this in favor of using a fresh chile pepper) * 1 1/2 cups coconut milk (I used one can of organic «whole» coconut milk) * handful of fresh basil, preferable
Thai basil, minced (note that this
does not appear in the original
recipe) * 1 tablespoon finely chopped chives (I left these out and added a minced hot chile pepper instead)
I thought that, well, they are DRY so I don't have to
do anything else + all
Thai green papaya salad
recipes just say to throw them into a bowl and that's it.
I've never made
Thai before, but this
recipe gives me the confidence I can
do it and it will come out great!!!
Roast chicken + roast veggies (I didn't follow a
recipe for this, but if I
did I'd use this one) Sausage & Veggie Saute + salad (made without the shrimp and 4 uncooked sausage links)
Thai Turkey Meatballs + mashed cauliflower -LSB-...]
While this
recipe is good, alone it
does not have the punch that
Thai coconut soup should have.
Although this
Thai coconut soup
recipe calls for shiitake mushrooms and carrots, just about any vegetable will
do.
I have a backlog of
Thai recipes that I just didn't have time to post before my trip, so those should be ready to go soon.
What I'd
do if I were you is to find a cuisine that doesn't rely on dairy, for example
Thai (or almost anything Asian), and work with
recipes from a good cookbook.
Finally, a
recipe that has been on my «to
do list» for a while: the Pad
Thai.
