Seeing
as today marks the beginning of British Egg Week, we thought it would be a good time to share the pad
thai recipe that we learnt to make when we were in Thailand.
Imagine after your Thanksgiving feast having a

as least some of the leftovers; this is a treasure because it actually IS better with turkey.
I made this pretty close to the
recipe except I used
Thai Red curry paste
as per suggestions from some of the reviewers.
You could also try the massaman curry paste
recipe I linked to in the post, you'd still want to cut out or reduce the number of chilies, but since heat isn't
as essential to massaman curry you'd end up with something that tastes closer to an authentic
Thai curry.
I get the sense that Slater's
recipes, like those of the River Cafe ladies, are meant to be used
as springboards, not
as hard - and - fast

Thai yellow curry paste (such
as this) instead of powder - just toss the shrimp in the curry paste instead of the powder and then cook
as the
