I make it all the time even
for breakfast when there's not much to put on a sandwich — a nice organic spelt bread with a spread of
hummus, spinach leaves and
tomato from the garden makes a perfect breakfast or lunch around here...
Another reason
for this experiment was to be able to make different flavours of
hummus — hello beetroot, carrot, or
tomato and basil
hummus!
Top with things like
hummus / pesto /
tomato sauce as a base, loads of roasted veggies, your fave herbs / spices and some chickpeas / lentils
for extra protein.
I decided to go with cucumber,
tomatoes, pickled pepperoncini peppers, black olives, green onions, a drizzle of balsamic vinegar, a big dollop of my eggplant
hummus and finally I quickly whipped up a garlic sesame sauce
for the falafels.

Just layer
hummus, feta cheese, olives and
tomatoes, then bake

Not only is
hummus a great snack to enjoy with crackers and raw veggies, but this roasted
tomato hummus is mild enough to use as a creamy spread
for sandwiches and wraps.
The base is a protein packed gram flour flatbread base which is naturally gluten free as its made from chickpeas, which is topped with
hummus, avocado
for some good fats and just deliciousness, cherry
tomatoes and some charred asparagus
for a light, summery dish.
Spread
hummus on a plate and top with about 1 cup roasted
tomatoes (reserve remaining
tomatoes for another use).

hummus, along with whatever spices I am in the mood

What I don't use
for hummus I toss with some olive oil and garlic powder and bake in the oven

Tomato and White Bean Soup and it was a perfect light meal
for lunch or dinner.
I have a crudité of fresh green beans, carrots, peppers, red and yellow
