To make stuffing: COMBINE
figs, artichoke hearts, breadcrumbs, cheese, fennel, red onion, garlic, oregano, thyme, red pepper flakes,
half of parsley and
half of tarragon in a large bowl;
toss together.
Season with salt and pepper, then pour in the water,
toss in the mint bundle, and stir in
half of the chopped mint, and, if you're using them, the honey and
figs.
