This is one my favorite recipes and has become a staple in my house... we call it «
yellow soup» because the first time i made it there was something of a
tumeric explosion in the kitchen that left
yellow stains everyhere... Note to Self ~ do not attempt elaborate new recipes while intoxicated....
Every cook has their own recipe, making the taste vary slightly from person to person; and while the variety of spices are endless, the most commonly used in
yellow curry are coriander, cumin, mustard, chili powder, ginger, garlic, cardamom, cinnamon, and
tumeric — giving the curry it's
yellow color.
For the
yellow eggs, I used 1 tbsp
tumeric, for the pink I used beet juice and for the purple I used blueberries.
Currently this means brown rice + a basic
yellow dal + plain yogurt on the side + shredded brussel sprouts sauteed with a lot of indian spices (cumin seeds, some garam masala, some
tumeric, salt, a little chili powder.)
Get creative and go for all sorts of colours - bright pink (raspberries, more beetroot),
yellow (
tumeric), green (spirulina), purple (acai powder), etc!
Tumeric has a bright
yellow color and a warm, bitter taste which is just in line with the flavor trends.
1 tbsp olive oil 1
yellow onion, diced 1 clove garlic, minced 1 tbsp red curry paste 1 tsp curry powder 1/2 tsp
tumeric 1/2 tsp coriander 1/2 tsp cumin 1 butternut squash, peeled and cut in 1 ″ chunks 1 can garbanzo beans (no salt added) 8 oz.
And i added a tiny sprinkle of
tumeric to give it a
yellow color.
Soup: 1 tablespoon canola oil — left out 1
yellow onion, chopped — no thanks 3 garlic cloves, minced 1 teaspoon ground coriander 1 teaspoon ground cumin 1/2 teaspoon ground ginger 1/2 teaspoon garam masala 1/4 teaspoon ground cayenne pepper 1/4 teaspoon ground
tumeric — left out because I didn't have any 6 cups low sodium chicken broth 1 15 - ounce can diced tomatoes (I apparently can't read and used a 28 ounce can!)
I also added a little
tumeric because my
yellow curry didn't give me that nice
yellow color.
Pink — canned beets Orange — chili powder
Yellow —
tumeric Green — spinach with
tumeric and purple cabbage mixed in Blue — purple cabbage
The
tumeric turned the eggs a really nice
yellow, and red cabbage turned them a beautiful blue, but the chili powder made them a dull tan — was hoping for reddish orange.
We use what has already been said:
tumeric for golden
yellow, coffee for brown, grape juice for a lavender color, red cabbage for blue tones... Have never been able to get a good green tho!
For marinade: 1 small
yellow onion 1 teaspoon of garam masala (or curry powder) 1 tablespoon spoon of grated fresh ginger 1 jalapeno, deseeded and chopped 2 cloves garlic 1/2 teaspoon of
tumeric powder 1 teaspoon of cumin powder

tumeric (kunyit).
