Udon Soup with Ginger Miso

By the same token, when serving
Udon with dipping
broth, the most popular use of noodles in Japan, the
broth is usually less intensely flavored with shoyu and mirin than when using Soba.
While both
Udon and Soba can be stir - fried,
Udon more readily absorbs the flavor of
broths, sauces, and seasonings because of its less assertive flavor.
Also, whereas
broth for Soba is traditionally flavored with wasabi, Japanese seven - spice is more commonly used with
Udon.
Serve out a portion of the
udon in a warmed shallow bowl or small cast iron pan, place clams and prawns on top, ladle hot
broth over the top, sprinkle with coriander and finish with a couple of lime wedges.
Liked this recipe for it's ease, followed recipe but had a few add - ins, used Trader Joe's miso ginger soup, 2 tsp chicken
broth, bagged baby greens of spinach, chard, and, kale, fresh mushrooms, pkg of frozen stir fry,
