In nutshell, these
vegetarian enchiladas are loaded with delicious flavors, veggies, are vegan (when topped with vegan
cheese and cream), and also gluten free because I have
used gluten free white corn tortillas.
I
used a flat spaghetti type noodle instead of Udon and as a
vegetarian I can recommend Parmesan
cheese.
Keep in mind this dish will not be vegan nor
vegetarian if you
use a good imported Peccorino Romano or Parmigiana Regiano
cheese to top it — both are made
using animal rennet.
Its ironic... when
vegetarian friends
used to come to dinner, my brain blocked out the obvious... pizza, stuffed potatoes, mac n»
cheese.
Once fries are cooked and have cooled for 1 - 2 minutes, layer them on large platter or two separate plates, top with black bean
vegetarian chili mixture, then sprinkle with shredded
cheese -LCB- I
used aged cheddar -RCB-, drizzle with sour cream, and garnish with sliced avocado.
My husband ate his as shown... I opened up a can of
vegetarian refried beans and
used it as the filling along with the sauteed peppers and onions and of course
cheese for myself... and for the kids, it was simply refried beans and
cheese.

Two nights later, I
used the above ^ chili leftovers, freshly chopped veggies and Daiya
cheese to make a rendition of Nature's Table

Here are my excuses — I am so
used to Brooklyn Kitchen competitions where everyone is a crazy foodie and eats meat that it slipped my mind that so many
vegetarians would be in attendance, which is shameful, as I was a
vegetarian for 15 years, and macaroni and
cheese was basically a food group to me then.
Some people don't like to add chicken mostly
vegetarians so
use some veggies and
cheese in the mixture instead of chicken.
Approx. 100 grams goat
cheese 1 c. chili regular or
vegetarian 1/2 c. non-dairy shredded
cheese (I
use Daiya cheddar)
Vegetarian:
use the wheat berries, kale, beans and top with your favorite
cheese.

Use only fat free
cheese, and nonfat sour cream or fat free yogurt as garnishes.
You could
use a plant - based
cheese with vegan butter to make the sandwich vegan or for
vegetarian use your favorite sliced
cheese like a pepper jack or provolone.
Now, that I'm a
vegetarian trying to transition to being a full time vegan, I have to come up with replacements for certain things that I
used to love aka
cheese.
This is an updated version of a similar recipe in The
Vegetarian 5 - Ingredient Gourmet (one of my earlier books), which
used regular cheddar
cheese.
I have found that it is best made with vegan cream
cheese, but you can
use vegetarian if you prefer.

No animal rennet is
used in the
cheese making process so it is
vegetarian friendly.
You can also substitute the meat
using some baked ham or prosciutto, or make it
vegetarian and just add extra
cheese or some veggies like zucchini, squash, brussels sprouts or mushrooms.
These are all the ingredients you'll need to make this popular cheesy Rotel bean dip: one 30 - ounce can of refried beans (I
use vegetarian refried beans), one 8 - ounce block of cream
cheese chopped up into small cubes, 2 cups of shredded colby - jack
cheese (or you can
use half Monterey jack and half cheddar), and one 10 - ounce can of Rotel Diced Tomatoes & Green Chilies.
I prefer this sometimes when you want something lighter, but I never
used to put
cheese in my pesto (even when I was just
vegetarian).
well im not a

used a coffee filter since i had no

It reminds me a bit of a
vegetarian shepherd's pie I invented for myself that

cheese block) briyani was my staple.

use non-dairy cream
cheese) wrap sandwich for lunch.
You could easily make this

cheese substitute.
If you like
using vegetarian bacon, you might also want to try out this vegan version of a twice - baked potato with

First of all, I removed the chicken to make a
vegetarian dish, I didn't have any fiddleheads, I
used ramps rather than shallots, I
used fresh, rather than bottled artichoke hearts, I
used way more than a splash of white wine, I
used water rather than chicken stock, I
used fresh thyme rather than fresh rosemary and I dropped the Parmesan
cheese altogether.
Remember to
use a Parmesan - style
cheese made with non-animal rennet if you're serving this dish to
vegetarians.
