I'm entering day 3 of this starter right now,
using organic kale (with lots of good white film / dust) in lieu of the
cabbage.
I
used a mixture of
organic baby spinach with Eat Smart Salad (contains: carrots, red
cabbage, kale, beet greens, broccoli stalks) and added mandarine.
As such,
organic farms — which tend to
use the healthiest soil — usually produce the tastiest and most nutritious
cabbages.
Ideally, you will
use organic red
cabbage for your kitchen experiment.
