Chocolate
layer: 1/4 cup
coconut oil 2 tablespoon honey 1/4 cup cocoa powder 1/4 teaspoon
vanilla extract dash of salt
I used light
coconut milk blended with dates and
vanilla to make the «cheesecake» swirl that I
layered and swirled into the mix of blueberries, bananas, graham crackers (yes, I blended the crackers INTO the smoothie!)
Combined with a
vanilla bean cream and
layered between thin
coconut sheets, they make for a unique dessert.
Then there is a
layer of fresh banana slices, encased in a creamy chocolate cinnamon avocado mousse, topped with
vanilla scented
coconut cream, topped with fresh passionfruit because YES passionfruit is amazing.
It was also incredibly easy to prepare — simply whisk pumpkin puree with spices,
vanilla, and a little maple syrup, and
layer it with greek yogurt and your favorite toppings (like granola, nuts, dried cranberries, chia or toasted
coconut).
8 — While your strawberry
layer is firming up, stir remaining 1 - 2 drops of stevia (or 1/4 tsp
vanilla) into the last of the
coconut butter and stir to combine.
7 — Once all your cups are topped with their pretty pink strawberry
coconut butter, you need to pop them back into the fridge or freeze for 5 mins to set before adding that final,
vanilla layer.
I
layered it with some chocolate ganache (made with
coconut oil, cocoa powder, maple syrup,
vanilla extract and little salt).
Layer two is the «caramel,» actually almond butter,
vanilla, and
coconut oil.
The night before, place the can of
coconut milk in the fridge for the strawberry
vanilla mousse
layer and soak the pistachio nuts for the pistachio orange cream
layer.
Variations Nut - Free Carrot Cake: Top the cake with your favorite
vanilla nondairy yogurt or a thin
layer of
coconut butter (a recipe for homemade
coconut butter is provided in Practically Raw Desserts!)

Things I changed: - cut the sugar by about half, using mostly dark brown sugar for the molasses kick - scratched the nutmeg and allspice but added about 1/3 extra of all of the other spices and also added nearly a tsp of ground cardamon - replaced the veggie oil with melted leaf lard - scratched the raisins - baked it on a deep sheet for only ~ 20 minutes - just barely until firm to the touch - then cut that sheet into three
layers - replaced the icing with my own 16 ounce cream cheese, 8 ounce butter, ~ 6 ounce heavy cream, ~ 5 ounce honey, 1 tsp
vanilla combo - toasted the
coconut before dressing the cake.
With
layers of sweet mango, creamy
vanilla coconut whipped cream, and chia pudding, this parfait is out of this world!
