Vegan Day so what better way to celebrate than with a new recipe — one of the best I've made!
I eat mostly
vegan these days so hopefully I'll have some luck with my substitutions, otherwise this might have to be a cheat treat for me!

Sun - we ate at Rudy's for Greg's birthday Mon - we are having a labor
day picnic for lunch

vegan spaghetti and «meat» balls for us and the smiths Wed - asian noodle salad Thurs - leftovers Fri - pizza
It tastes like an almond joy bar, which my
vegan boyfriend misses
so much from his omni
days.
So, today is technically the last
day of
Vegan MoFo and that makes me super sad because I didn't get all of the Return of the Mac recipes done for you that I originally set out to do....
My VeggieGuy Dennis loves just about anything in sandwich form,
so he was beyond excited when he saw that I had a new cookbook called

so Aaron rushed home from his end - of -

days as a preaching uninformed
vegan and I'm
so glad they're behind me.
I am only on my third
day of becoming a vegetarian and working toward being a
vegan but my mouth has been watering from
so many of your recipes and then I get to this one and....
My
days of ordering dessert at restaurants are long over for a multitude of reasons, but thanks to you I can enjoy desserts at home that are as delicious as any I remember from my restaurant
days — and
so much healthier and

Looks
so intriguing, I'd love to try it — there are more and more good
vegan non-soy-based powders these
days.
But more than loving it, I miss it dearly — Roanoke has nothing on Soul Veg (and by nothing I mean nothing, there's no semblance of
vegan soul food here, just that hippy - granola - healthy stuff, which is good... but you know...) Back in the
day there used to be a cookbook based off their recipes and one of my friends managed to get a copy — I've never seen or heard of another one out there,
so who knows the story.
I made a double batch, half I baked as is, I thought it might benefit from am egg in the next half,
so If you don't need it to be
vegan, I added an egg, they spread better and were softer and chewy for a few
days, reminded me of my mom's that I can't eat anymore.

This simple Clean Eating
Vegan Slow Cooker Black Eyed Pea recipe uses only 3 basic ingredients, is made in a slow cooker or crock - pot, and can be made in a large quantity
so you can freeze the leftovers and have another quick meal for another
day.
Okay,
so it's not exactly standard July 4 fare, but... cold and creamy, tuna fish salad (
vegan of course) sounded
so good to me on a recent hot and humid
day that I decided to create a batch, holiday appropriate or not.
Modifications were: - used traditional oats because I didn't have quick cook, just gave them a quick zap in the Nutribullet and kept 1/4 cup unground for texture - omitted hemp seeds because I don't have those - unsweetened applesauce instead of bananas (love bananas but wanted my blueberries to have center stage)- I'm not
vegan so I used 2 medium eggs - replaced 1 tbsp peanut butter with mayo (love peanut butter but not necessarily mixed with other flavors)- threw in maybe 1/2 tsp chia seeds just for grins Baking time was right around 35 minutes in a 8 × 8 Pyrex baking dish and I left them to cool all
day and cut them into 9 bars this evening.
The other
day I got cravings for a wedge salad, but I didn't want to go to Outback Steakhouse or TGI Friday's to order one,
so I created a healthy version (raw
vegan).
