Just don't do what I did and try to saute the porcini mushrooms instead of the crimini mushrooms... I wish the
recipe said to set aside, or have you go ahead and
work on the other veggies and mushrooms while the porcini mushrooms are steeping, THEN tell you to slice them, which would then be time for everything to go into the
vegetable broth.
Alexandra, I use regular almonds in this
recipe, I haven't tried making this
recipe in a
vegetable mixer so not sure if that would
work.

work if you substituted the tomatoes for some other
vegetables — maybe sautéed onions, summer squash, bell peppers, etc..
Love ramen noodles, they
work with so many combinations it is a great alternative to
vegetable soups, just throwing a few ingredients and the lunch or dinner is done, also this
recipe is amazing if you want something a little bit more satiating than a soup.
I could see using this
recipe at the end of the week to use up whatever
vegetables I have left in the fridge — I could see it
working well with almost anything.
