veggie salad, homegrown pickling cucumbers sliced thick and dipped into homemade guacamole or hummus, and grapes or strawberries or peaches.

salad, let's blame that on the extra Feta [snack] protein shake with strawberry, frozen banana, and vanilla protein powder [dinner] layered nachos (see recipe below) * unpictured snacks * half whole wheat bagel with PB, baked sweet potatoes

For
lunch I made a
veggie pasta
salad with ditalini pasta, black beans, green pepper, red pepper, corn, celery and hemp hearts along with a homemade cumin dressing.
Try Garlic Herb spread on a
veggie sandwich or Honey Mustard spread paired with Ham or chicken — or make this egg
salad breakfast sandwich (The Professor packed a few triangles in his
lunch to enjoy with his soup).
This was one of the nicest
veggie sides I've had in ages, it would make a great starter or even a
lunch or supper dish all of its own with a light green
salad to accompany.
