We've heard of bakers experimenting with
aquafaba as a
whipped egg white substitute, but we haven't used it
in this application, so it would be an experiment.
Very gently fold the
whipped aquafaba into the strawberry mixture
in order to maintain as much of the airiness as possible.
Whip the
Aquafaba (chickpea liquid)
in a medium size bowl with a hand - mixer until you have the consistency of
whipped cream.
Once you make the raspberry mixture, leave it to cool down and then gently fold
in to the
whipped aquafaba, you will have beautiful raspberry mousse.
