I had made the mistake of assuming that people knew how to

whip them to stiff peaks and also I assumed they would use a mixing machine and not do it by hand.
I can easily
whip these up in the morning before work in the same amount of time it would
take to make
eggs and toast.
In a large bowl
whip egg whites with cream of tartar (with electric mixer it
takes only few minutes).
Take the
egg white mixture and
whip until stiff peaks.
It only
takes about 15 minutes to
whip up a delicious chicken - like salad using mashed garbanzo beans, chopped celery, diced onion and red peppers,
egg - free mayonnaise and a little mustard, Italian dressing, garlic, salt and pepper.
Carefully fold the remaining
whipped egg white into the chocolate mix (
take a half - turn around the bowl with the whisk and then shake the mousse through the tines of the whisk).

taken off 1 ounce Citerro cubed Pancetta (you can find it at Trader Joe's) 2T heavy

Add the remaining
whipped egg whites, and using a spatula, carefully fold them into the batter,
taking care not to deflate them too much.
I made these this way last night, they don't look much different from your photo, but it only
took 3 min to
whip the
egg whites up.
Then
take the 4
egg whites,
whip them up and pour into a small frying pan.
